Vodka Pasta

An old roommate of mine gave me a recipe for a Vodka Pasta dish. It has become a staple in our family and a dish that I make regularly when I bring meals to people. I made it this past Sunday for a friend and kept enough for us to have one meal of our own. When I make the dish, I use a pound of pasta so there is plenty to go around. It serves about 8 people.



The recipe is as follows:

Vodka Pasta
1 lb of bowtie (farfalle) pasta
1.5 (16oz) jars of tomato sauce
1 cup of vodka
1 stick of butter
1 carton (1/2 pint) of heavy whipping cream
a pinch of pepper flakes
grated parmesan cheese

MELT: the butter in a sauce pan over medium heat. Once melted, add the cup of vodka and pinch of pepper flakes.
SIMMER: for 5 minutes - stand away from the pan as the alcohol fumes may become overwhelming.
ADD: the carton of heavy whipping cream and 1 1/2 jars of tomato sauce. Stir until well blended and cover. Allow sauce to simmer on low heat for 10 minutes.
COOK: the bowtie pasta until al dente. Drain pasta and combine the pasta and vodka sauce. Sprinkle with cheese and Enjoy!
