Costanzo's Marinade Salad

I was first introduced to this summer marinade salad at our friend's house nearly a year ago. Since then I've made it a few times and love it every time! It is a salad that can easily be thrown together with whatever fresh vegetables are around the house.

Here is what the salad looks like; recipe is below the picture...



Costanzo's Marinade Salad

1 pkg cherry tomatoes
1 medium cucumber
1 pkg of mozzarella cheese
1 can large black olives (drained)
1 can corn (drained)
1 can garbanzo beans (drained)
2 jars baby onions (drained)
red wine vinegar
olive oil
salt
pepper
basil (fresh or dried)

CUT: the cherry tomatoes, cucumber and mozzarella cheese into bit-size pieces.
MIX: the halved tomatoes, diced cucumbers, cubed cheese, black olives, corn, beans and onions in medium bowl.
DRIZZLE: the red wine vinegar and olive oil evenly over the salad. Sprinkle with fresh basil and a dash of salt and pepper.
MARINATE: the salad and stir occasionally.
